It wasn’t something I preferred, it had an interesting paper-like aftertaste? I’m not sure if that’s the buttery/savory notes that it mentioned.

Hi Adriana, sorry to hear that Mitla didn't work for you. We haven't experienced those flavors in it, but it can happen sometimes with shorter ferment cacao. Mitla is a 50/50 blend of unfermented and 5-day-fermented cacao seeds. For a more 'bright' profile with slight fruity notes, you could try Heart of the Earth cacao or one of our other long-ferment varieties.

My second 1lb order

This cacao has a great taste and smell. I eat it straight out of the package. Both my orders have been fresh. The packaging is well sealed with no odor leakage, but not excessive or wasteful. Shipping was fast both times which is really appreciated. The effects are very strong though hard to describe. I like the fact that it comes as a solid piece rather than a bag of fragments. A solid piece has less surface area to absorb air and moisture, making it stay fresh longer.

Easy to Use

It comes in two slabs which makes it easy to break off as much cacao as one wishes to use. Much easier to use than a single block that has to be chipped away from. Very satisfying mixed with coffee as well.

A SOUL LIFT CACAO EXCLUSIVE… Mitla is our first-ever cacao from Mexico! It’s grown in Chiapas near the southern border, in the historic cacao cultivation town of Soconusco. The seeds are taken to the nearby state of Oaxaca, where they’re toasted and peeled by Zapotec women in a small village east of Oaxaca City. It is named after the Zapotec archaeological site near where it’s prepared. Profile: Savory, buttery blend of 5-day fermented and “washed” (unfermented) cacao. NOTE: The photo of traditional "metate" stone grinding is to demonstrate how it's still done at home in Oaxaca. The packaged cacao is ground in a mechanical mill.

DIRECTIONS
To make a drink of ceremonial cacao, finely chop the cacao. Measure 1/4 cup ground cacao and 6-8 oz of hot water (steaming but not boiling). Mix with a blender (with caution!), handheld frother, or other agitator to fully melt the cacao. Optional: Add a dash of cayenne pepper and natural sweetener to taste. Enjoy!

Cacao can also be added to smoothies, oatmeal, ice cream, and other foods. Experiment with making your own chocolates or bliss balls!

Heavy metal content: This cacao was tested for heavy metals by a third-party laboratory and found to be in a safe range for lead as advised by the FDA, and for cadmium as advised by the EU Commission, in parts per million (ppm). *Some melting of cacao paste may occur during shipping. This isn’t a problem in terms of the quality of the cacao, but the shape may be different than pictured. 

*Color and pattern variation is natural for pure artisanal cacao. Smooth white areas are most likely the natural cacao butter. Reach out if you have any questions.
